If You Are What You Eat ...

I am a potato! I have eyes, a thin but protective skin, and a scrubbed complexion.

I am energy-filled, good for you and rely on responsible farmers for my very existence.

I require a climate in which there is good dirt, water, sunshine, cool nights, and proper handling -- from seed potato to harvest and utilization in the food chain.

I am solid. I am nutritionally dense. I am delightful, delicious, and nutritious.

I am at home, whether in the potato fields of America or on your dinner table.

Partake, because ... you are what you eat!

Julie Kay Smithson proudly admits to being a potato lover. Her research depends on lots of energy, which she derives from five servings of potatoes each week. Her website www.propertyrightsresearch.org celebrates property rights and farmers.
